Dinner Time, but almost out of chicken...

Let's make Fajita Black Bean Burritos! I can almost bet that we have all had the same problem. It's dinner time and you only have 4 chicken tenderloins left. Looks like a trip to Costco is in order, but just not tonight. Here is something easy, quick, filling, healthy, and tasty. (That's the best part, right?)

Here is what you need (add or subtract items so you can use what you ALREADY have):
  • olive oil or cooking spray such as PAM
  • chicken, cut into 1" cubes (however much you have or what your family will eat)
  • spices (I use parsley, fajita spice mix, and whatever smells good-we even tried unsweetened cocoa)
  • 1 can black beans (or pinto) 15 oz.
  • 1 can corn drained, or partial bag frozen
  • 1 bell pepper, chopped to your liking
  • 1/2 cup-1 cup white/yellow onions minced (can also use dried)
  • any other vegetables you want to add or substitute. My husband HATES veggies and so I add chopped mushrooms or chopped cauliflower and he doesn't even notice!
  • Tortillas
  • shredded cheese, any kind
  • sour cream (optional)
  • lettuce (optional)
  • tomatoes (optional)
Here's what you do:
Put olive oil or cooking spray in a saute pan. Allow to heat up, then add chicken. Cook until it is no longer pink. I like to add a little spice here.



Next, add bell peppers, onions, mushrooms, and anything you want to get sauteed a little bit.


Then, add corn. Mix well.


Next add drained and rinsed black beans. Add more spices. I add enough so that it smells how I want it to taste. By now it should be really colorful.


Let the juices simmer together for a little while while you get out your burrito toppings. Add lettuce, tomatoes, sour cream, cheese, or whatever else makes your heart sing. Fold it up into a burrito or taco and enjoy!
